MOROCCAN COOKERY
INTRODUCTION
You will have been enjoying much Moroccan cuisine during your tour to Morocco; fresh and colourful salads, savoury tagines, sweet desserts and assorted patisserie. And, inevitably, Moroccan tea (hopefully with a variety of herbs to make it a truly delicious and refreshing drink).
Now is your opportunity to learn some Moroccan cooking and baking methods so that you can recreate these foods once you are back home. You might even find yourself buying a traditional tagine pot to take home to futher make your Moroccan cooking even more authentic.
The choice is to select a savoury cooking lesson or a patisserie baking lesson. You can, of course, do both.

THE AMAL COOKERY SCHOOL
The Amal Organisation is all about empowering women to be able to change their lives. By training women in many aspects of cooking and baking, women gain skills that can then open doors, first to employment and then to, hopefully, owning and operating successful businesses of their own. Additionally, boosting self esteem and promoting a ¨can do¨ spirit and ethos are all part of the Amal training programmes.
Also, Amal invites guests to have a half day or whole day cooking/baking experience - men as well as women. As well as being educational and fun, your particpation helps to boost funds to help further the work of Amal.
TAGINE COOKERY CLASS: MORNINGS: 09.30 - 13.00
This involves you in preparing a traditional savoury dish from scratch. All ingredients and spices will be provided at your work station and fully explained as to how they should be prepared and used in the recipe.Once prepared, tagines are then cooked outside, over a traditoinal charcoal burner (with bellows available to add oxygen and to raise cooking temperatures).
As your tagine cooks, herbs and mint can be gethered from the Amal garden. Then a tea ceremony shows you how tea is made the Moroccan way.
Then it's lunchtime!PATISSERIE BAKING CLASS: MORNINGS: 10.00-12.30
Baked goods are often served with mint tea. They tend to be small and so several can be eaten at each sitting.
You again prepare a variety of traditional baked goods from scratch. They may be Ghreyba cookies, Msemmen, just for example. All ingredients will be provided at your work station and fully explained as to how they should be prepared and used in the recipe.
As your items bake, herbs and mint can be gathered from the Amal garden. Then a tea ceremony shows you how traditional tea is made the Moroccan way. Of course, this involves the eating of some baked goods, yours as well as some of Amal's.
